Special Chopped Chicken Salad

Special Chopped Chicken Salad is unique and delicious because of all the extra-flavorful ingredients – roasted red pepper, heart of palm and mild green chiles, among others. Water chestnuts add a nice crunch and feta cheese tops it off perfectly!

Low-calorie, low-carb and healthy, Special Chopped Chicken Salad is perfect to make ahead for a packed lunch (leave out the lettuce until later), or as a main-dish supper in the summer, when it’s too hot to cook.

I like Ortega Mild Green Chiles, but I usually buy the Fire Roasted Red Peppers and Feta Cheese at a discount grocer like Cash ‘n’ Carry or Costco to save money. If you buy a large quantity, you can divide these items up and freeze them to use as needed.

Here’s the salad recipe: Chop the onion, tomato, red pepper, water chestnuts, olives, heart of palm and green chilies.

Special Chopped Chicken Salad

Place them all in a large bowl. Chop the chicken and add it to the bowl. Drizzle olive oil over the salad and stir to mix. Taste and add salt and pepper, as desired.

Tear, or chop, the lettuce and put 2 cups in each bowl (or on plates). NOTE: You could mix the lettuce into the salad IF you will be using all of it, but if there will be leftovers, add the lettuce just before serving to keep it crisp. Scoop one cup of the salad, per person, onto each bed of lettuce.

Ingredients
  • 2 cups cooked chicken, chopped
  • ½ cup sweet onion, chopped or sliced (optional)
  • 1 medium roma tomatoes, chopped
  • ¼ cup roasted red pepper, chopped
  • ½ cup water chestnuts, chopped
  • ½ cup black olives, sliced (about 12 olives)
  • ¼ cup hearts of palm, chopped
  • ½ cup mild green chiles, chopped
  • 1 tablespoon olive oil
  • 8 cups romaine lettuce, or other greens
  • ⅓ cup feta cheese, crumbled
  • salt & pepper, to taste
