Loaded Ham and Chickpea Salad

Loaded Ham and Chickpea Salad is low in carbs and calories, and high in protein – a perfect lunch or light summer supper.

I created Loaded Ham and Chickpea Salad as an adaptation of one my other favorite recipes, Ham and Peas Patio Salad, based on what I had on hand, so feel free to invent your own version.

Loaded Ham and Chickpea Salad keeps in the refrigerator for 2-3 days for lunches, or for dinner on a hot summer night, but if you make it ahead, leave out the tomatoes and lettuce until you want to serve it. (Actually, it’s great even without the tomato or lettuce!)

Loaded Ham and Chickpea Salad

Ingredients
  • 8 ounces ham, chopped
  • 14 ounces garbanzo beans (chickpeas) - 1 can or home-cooked, drained
  • 6 ounces cheddar cheese or Colby, cubed
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 green onions, chopped
  • 1 cup frozen peas
  • cherry tomatoes, halved (optional)
  • lettuce leaves, optional
  • DRESSING:
  • ½ cup mayonnaise
  • 2 tablespoons lemon juice (or lime)
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
Instructions
  1. In a large bowl, mix the dressing ingredients and stir to blend well.
  2. Drain the garbanzo beans.
  3. Chop the ham and cheese and add them to the dressing in the bowl.
  4. Chop the green onions, bell pepper and celery. Add them and the drained beans to the bowl.
  5. Cover and refrigerate for at least one hour before serving.
  6. Serve the Ham and Garbanzo Bean Salad on lettuce leaves, garnished with cherry tomatoes, if desired. Or, chop the lettuce and mix them with the tomatoes right into the salad to serve.
  7. NOTE: The salad will not keep as well once the lettuce and tomatoes are added, so wait until you are ready to serve it.

Serve the Ham and Garbanzo Bean Salad on lettuce leaves, garnished with cherry tomatoes, if desired.
