Ingredients
  • 12 ounces peas, frozen
  • 1 cup rice, cooked
  • 1 scallion, minced
  • ½ cup dill pickle, chopped
  • ¾ cup mayonnaise
  • 5 ounces ham, chopped
  • 5 ounces swiss cheese, cubed (or extra sharp cheddar)
Instructions
  1. Mix all the ingredients together in a bowl. Refrigerate until needed and serve chilled on a bed of greens with tomato wedges, if desired.
