If you have leftover rice, you can make this easy salad without any cooking required. Or try it with leftover quinoa instead of rice. Either way, it’s delicious!
- 12 ounces peas, frozen
- 1 cup rice, cooked
- 1 scallion, minced
- ½ cup dill pickle, chopped
- ¾ cup mayonnaise
- 5 ounces ham, chopped
- 5 ounces swiss cheese, cubed (or extra sharp cheddar)
- Mix all the ingredients together in a bowl. Refrigerate until needed and serve chilled on a bed of greens with tomato wedges, if desired.
