Awesome Eight Layer Salad

Awesome Eight Layer Salad is one of my FAVORITE recipes, whether it’s for entertaining, a potluck, picnic or barbecue. It’s made ahead of time, so there’s no last minute fuss, it’s beautiful, has terrific flavor AND is low-calorie and low-carb. What else could you ask for?

To show this beautiful salad at it’s best, put it into a straight-sided, clear glass dish so the layers of color can be seen and enjoyed by all. To dress it up even more, arrange the slices of hard cooked eggs around the side of the dish, like the picture. (I borrowed this picture from Diane’s Kitchen because my own photo was accidentally deleted – thank’s Diane.)

I’m not sure why this is called ‘eight’ layers because it’s actually more like ten, but although Awesome Eight Layer Salad has a lot of ingredients, it’s EASY to make. Here’s the recipe…

Awesome Eight Layer Salad

Hard boil the eggs; cool, peel and slice them. Shred, or chop, the lettuce and put it in the bottom of the bowl.

If you wish, arrange the sliced eggs around the side, standing on their round edges (like the picture), so the yolk shows through the glass. Alternately, you can add them just before serving.  Add a layer of sliced radishes…

…celery, water chestnuts, thinly sliced carrots, and ending with the peas to cover the entire salad (no need to thaw them).

Spread the mayonnaise over the entire salad all the way to the edges to seal. Sprinkle the sugar over the top.

Cover the whole salad with the grated cheese, then cover the bowl with plastic wrap and refrigerate overnight, or at least 12 hours.

Just before serving, garnish with tomato wedges and bacon bits (and the eggs, if you did not put them in the salad earlier). BEAUTIFUL! and delicious. Perfect for entertaining or a potluck.

Awesome Eight Layer Salad

Ingredients
  • 1 head iceberg lettuce
  • 5 radishes, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 stalks celery, sliced
  • 4 ounces water chestnuts, drained, sliced
  • 2 carrots, thinly sliced (or coarsely grated)
  • 10 ounces frozen peas (no need to thaw)
  • 1 cup mayonnaise (good quality, such as Best Foods)
  • 2 tablespoons sugar
  • 3- 4 hard cooked eggs, sliced (depends on the size of your bowl)
  • 1-2 tomatoes, cut into wedges (for garnish)
  • 3 slices bacon, cooked and crumbled
  • 1 ounce Parmesan or Romano cheese, finely grated
Instructions
  1. Use a large, clear glass salad bowl if you have one, straight sided would be even better.

Alternately, you can add the eggs just before serving.
  4. Add a layer of sliced radishes, then green and red bell peppers, celery, water chestnuts, carrots, and ending with the peas to cover the entire salad (no need to thaw them).
